The IHM (International Hospitality Management) programme focuses on developing future leaders for the hospitality industry. This requires a wide array of competencies that require an Interdisciplinary approach where each subject’s contribution is carefully considered as time and resources are constrained in the core of the programme. As such, exposure to specialised F&B areas such as wine, is limited in the curriculum, allowing opportunity for specific subject elaboration in a minor module. It is our contention that in depth knowledge of the wine industry and a omprehensive knowledge of viticultural and vinicultural practices will provide a solid foundation for students who aspire to a career specifically in the Food & Beverage area of the hospitality industry.

Minor content

The minor Wine Business South Africa aims to achieve professional capability in developing, operating, marketing, and managing, a wine business in South Africa. The students will also cover viticulture and viniculture. They will also present a food and wine pairing event.
It is the intention of the Minor Wine Business to take a broader approach that speaks to more students, not only in the Hospitality, but also in the Tourism and Leisure domain.
This minor also involves a field trip to the Cape Winelands.

 

There is an extra cost of 875 euros. This goes towards materials and wines from the Cape wine academy, as well as the Cape winelands tour.

Structure of the minor

The minor aims to achieve the following learning outcomes:

1. Display professional insight in the history of wine, wine growing and production, and the
characteristics and classifications of the wines produced in South Africa.
2. Facilitate professional wine tastings and food pairing of wines, and evaluate wines according
to international wine tasting and scoring standards.
3. Present a professional business case for a South African wine business.

This minor works in collaboration with the prestigious Cape wine academy, after completion of this minor the student will get 2 certificates from the cape wine academy.
