From now on, locally produced milk in cappuccinos at the coffee corners in Leeuwarden

NHL Stenden Hospitality Group has joined forces with Van Hall Larenstein's Food Application Centre for Technology (FACT) and the Dairy Campus. From now on, when you order a cappuccino at one of the coffee corners at NHL Stenden University of Applied Sciences, you will get milk that has been produced locally. An initiative that contributes to the transformation of the dairy chain, promotes sustainability and engages students in agricultural research.

During the kick-off of the collaboration, a tasting was organised where attendees could try the first batch of milk produced at FACT. FACT, is a small dairy factory run by bachelor level and upper secondary education level students from Van Hall Larenstein. Initial reactions have been laudatory. Not only is the milk much fuller in taste, but the sustainability aspect also appeals.

The milk comes from Holstein-Friesian cows from the Dairy Campus, near Leeuwarden. Usually, the milk produced by the cows is processed by Friesland Campina. A separate milk flow of about 200 litres per week is now added to this, which is processed by FACT and goes to NHL Stenden. This milk is used in the milk coffees at the coffee corners of the university of applied sciences in Leeuwarden.

In addition, the project is also a unique opportunity for the students of the above-mentioned universities. For instance, it offers students from Van Hall Larenstein the opportunity to develop new plant-based and hybrid products such as oat- and soy-based milk and yoghurt which will be tested extensively. The students then work together to devise strategies that encourage sustainable choices among consumers. And, finally, milk is whipped up into a delicious frothy cappuccino by students from Hotel Management School.

The collaboration is the start of a multi-faceted partnership between the parties involved.
